This Mediterranean-style spinach salad recipe with Frissee lettuce, almonds and pita chips offers the perfect balance of flavor and crunch.

Scale

Ingredients

For the Blood Orange Vinaigrette

  • 1/2 cup fresh blood orange juice
  • 1/3 cup good extra virgin olive oil
  • 2 tbsp sherry reserve vinegar
  • 1 tbsp fresh grated ginger
  • 1 tsp garlic powder
  • 1 tsp ground sumac
  • salt and pepper

For the Frisee Spinach Salad

  • 1/3 cup chopped dried apricots
  • 2 tbsp sherry reserve vinegar
  • 2 loaves pita bread
  • 2/3 cup vegetable oil
  • 1/3 cup raw unsalted almonds
  • 1/3 cup raw sliced almonds
  • 1/2 tsp sumac
  • 1/2 tsp paprika
  • salt
  • 4 cups baby spinach
  • 3 cups chopped frisee lettuce
  • 2 shallots, thinly sliced
  • 12 blood oranges, peeled, sliced crosswise (rounds), optional

Instructions

  1. To make the blood orange vinaigrette, whisk together the blood orange juice, olive oil, vinegar, fresh ginger and spices. Set aside.
  2. In a small bowl, soak the dried apricots in 2 tbsp of sherry reserved vinegar for five minutes or so. Drain well and set aside.
  3. Toast the pita bread until dry and crispy (but not browned), then break it up into random-sized pita chips. In a frying pan, heat the oil on medium-high. Now add the pita chips and raw almonds, fry together briefly and then add the sliced almonds, sumac and paprika. Toss everything together, and remove from heat when pita chips and sliced almonds have turned golden brown. Place on a paper towel to drain.
  4. In a mixing bowl, add the baby spinach, chopped frisee lettuce, shallots and apricots. Dress with the blood orange vinaigrette, and toss lightly.
  5. Now add the fried pita chips and almonds. Toss everything together one more time.
  6. When ready to serve, divide the salad into individual serving bowls; and, if you like, add two blood orange slices to each bowl. Enjoy!
