If you’ve been eating the Mediterranean diet for any amount of time, you know that tomatoes are an essential ingredient that we kinda use all year round. But when tomato season hits, I am still as excited about it as my teenage daughter is about the next new electronic gadget or app.
I have been known to buy several pounds of each tomato variety I find in just one trip to the market. And, between pasta dishes like this shrimp orzo; baked fish with tomatoes and capers; simple grilled vegetables; my MUST-TRY Shakshuka; and the plethora of tomato salads from tabouli to fattoush and everything in between, I always manage to run out of tomatoes. (Okay, I need to write a roundup of tomato recipes because clearly we have plenty here!)
Simple Mediterranean Tomato Salad Recipe
This tomato salad recipe is the simplest and, in my opinion, the most glorious way to highlight beautiful ripe tomatoes.
It takes just a few ingredients you may already have on hand: tomatoes, red onions, fresh parsley and fresh dill. A little fresh garlic, generous pinch of sumac, and blocks of creamy feta add so much flavor.
And for the dressing, you guessed it, fresh citrus juice and quality extra virgin olive oil. For most salads, I use Early Harvest Greek extra virgin olive oil, it’s rich finish adds a lot of depth and plays up all the beautiful elements in this salad.
To take the flavor to next level of delicious, I add fresh garlic and blocks of feta cheese. You can certainly omit the feta, if you want to keep this tomato salad vegan.
How to Choose Tomatoes
Although the fresh herbs here are important, the star ingredient in this tomato salad recipe is, of course, tomatoes. So, the end result will depend heavily on how good your tomatoes are.
Not all of us have tomatoes growing in our gardens. I’m lucky enough to have a great farmer’s market near me, but even when shopping at a grocery store, I try to choose the best tomatoes I can find. As a rule of thumb, I avoid buying tomatoes from a refrigerated case because cold damages tomatoes and stops ripening. But here are a few tips:
1- Tomatoes that are displayed loose are easier to evaluate. Avoid packaged tomatoes.
2-Look for tomatoes that are ripe but still firm. Skin should be smooth without bruises or deep cracks.
3- Good tomatoes will be fragrant, even green ripe tomatoes will have a bit of a sweet smell. And they should be plump and heavy.

Simple Mediterranean tomato salad with red onions and fresh herbs. Garlic, a generous pinch of sumac, creamy feta add flavor. Citrus and extra virgin olive oil make the dressing!
- 6 to 7 medium ripe tomatoes (on-the-vine tomatoes or heirloom tomatoes preferred), sliced into wedges
- 1 medium red onion, halved, then thinly sliced
- 3 garlic cloves, minced
- 1 packed cup chopped fresh parsley leaves
- 1 packed cup chopped fresh dill
- 2 1/2 tsp ground sumac
- Salt and freshly ground pepper
- 1 lemon, juice of
- 2 tsp white wine vinegar
- 1/3 cup Early Harvest Greek extra virgin olive oil
- Feta cheese, optional
- In a large salad or mixing bowl, add the tomatoes, onions, fresh herbs and garlic. Add sumac, salt and a generous sprinkle of freshly ground pepper.
- Add the lemon juice, white wine vinegar, and extra virgin olive oil. Toss well to combine. Taste and adjust the salt to your liking.
- Transfer to a serving platter or bowl. Top with large slices of quality feta cheese (optional). Enjoy!
