1poundasparagus,trimmed, and cut into 3-inch pieces
3clovesgarlic,minced
1shallot,chopped
1lemon,zested and juiced
1teaspoonchile pepper flakes, I used Aleppo pepper which is milder
1teaspoonza'atar
⅓cuproasted red peppersfrom a jar, drained, and chopped
⅓cupfeta cheese,more to your liking
Instructions
Heat up ¼ cup olive oil over medium-high heat until just shimmering.
Add the asparagus and season with kosher salt and black pepper.
Cook for a couple minutes, tossing regularly, then add the shallots and garlic and cook for another 3 minutes or until the asparagus is tender and lightly browned.
Remove from the heat and add the lemon juice, zest, spices, roasted peppers and feta cheese. Serve immediately.
Notes
Be sure to use a large pan or cast iron skillet that is large enough to cook the asparagus without crowding.
Feel free to change the seasoning. Asparagus will take well to other spices and dried herbs like oregano, cumin, paprika, or even smoked paprika, or red pepper flakes for heat.
