Ingredients
2pounds Yukon Gold potatoes, peeled and halved (other waxy or all-purpose potatoes will work)
Cover the potatoes with water. Place the potatoes in a large cooking pot. Add enough water to cover them by 1 inch, then add a dash of kosher salt.
Boil until tender. Set the pot over high heat and bring the water to a rolling boil. Reduce the heat to medium-low or low, cover, and cook at a gentle boil for about 20 minutes, or until the potatoes are tender. Cooking time will depend on the size of the potato pieces. A fork should slide easily into the center of a potato without resistance.
Drain. Drain the potatoes in a colander, then transfer them to a large bowl while they are still hot.
Season. Add a dash of kosher salt and black pepper, followed by the garlic, rosemary, parsley, and extra virgin olive oil. Toss gently until the potatoes are evenly coated, adding more olive oil if needed.
Rest and serve. Set the potatoes aside briefly to allow the flavors to meld. Serve warm or at room temperature.
Notes
To leave the skins on: Yukon Gold potatoes have thin skins, so peeling is optional. Scrub them well and remove any sprouts before halving. Quarter or cut especially large potatoes into smaller, similarly sized pieces.
To prepare ahead: Place the peeled, cut potatoes in a bowl and cover them with water by about 1 inch. Refrigerate for up to 24 hours. Do not leave peeled potatoes at room temperature, where they will begin to brown.
To store: Refrigerate leftover boiled potatoes in a tightly covered container for up to 2 nights. The garlic flavor will become more prominent the longer they sit.
To serve: Serve warm or at room temperature. This recipe feeds up to 6 people as a dinner side and also works well on a potluck or buffet table.
