Mix marinade. Combine olive oil, lemon zest and juice, garlic, ras el hanout, salt, and pepper in a bowl large enough to accommodate the chicken.
Marinate chicken thighs. Pat each chicken thigh dry on both sides. One at a time, add the chicken thighs to the marinade, turning to coat each one. Marinate the chicken for at least 15 minutes, and up to a day ahead. If marinating for longer than 15 minutes, cover and refrigerate.
Get ready. Preheat the air fryer to 380°F for 5 minutes.
Air fry chicken thighs. Place the chicken thighs in the air fryer basket skin side down in a single layer, leaving space between each one. Cook chicken thighs until beginning to brown, about 10 minutes. Flip and cook for another 6 to 8 minutes until well browned all over and the internal temperature registers 165°F using an instant read thermometer.
Crisp the skin. If you like, increase temperature to 400°F and air fry for another 2 to 3 minutes. Remove chicken thighs from the air fryer.
Rest and serve. Rest the chicken thighs for 5 minutes before serving.
