This simple roasted grapes recipe balances their concentrated sweetness with tangy sherry vinegar and fresh thyme. Ready in 25 minutes, they make an easy topping for creamy cheeses, toast, salads, roasted meat, and desserts.
Season the grapes. Add the grapes to a rimmed baking sheet. Toss with the olive oil, sherry vinegar, salt, and a good grind of black pepper. Add the thyme sprigs.
Roast. Bake for 20 minutes, or until the grapes begin to burst and char in places.
