This colorful wild rice salad combines chewy wild rice with crisp apples, pomegranate, cranberries, walnuts, spinach, and fresh herbs in a lemon-sumac dressing. Serve it at room temperature as a vegetarian side for holiday dinners, parties, or make-ahead lunches.
2crisp semi-sweet apples,chopped (I used a combination of Granny Smith and honeycrisp)
2shallots,chopped
1cuppomegranate seeds(from about 1 small pomegranate)
1cuproughly chopped walnuts
3/4cupdried cranberries
1/2cupchopped fresh parsley leaves
1/2cupchopped fresh mint leaves
Instructions
Make the dressing: In a small bowl, combine the lemon juice and honey. Add the garlic powder, sumac, and a large pinch each of kosher salt and black pepper. Whisk continuously as you slowly drizzle in the extra virgin olive oil. Set aside.
Cook the wild rice: Cook the rice according to the package instructions. Mine took about 40 minutes. Transfer the cooked rice to a large serving bowl.
Mix the salad: When the rice has cooled slightly, but not completely, add the spinach, apples, shallots, pomegranate seeds, walnuts, dried cranberries, parsley, and mint.
Dress and rest: Pour the dressing over the salad and toss. Taste and adjust the seasoning, then set aside to cool completely. Serve at room temperature.
Dress the salad while the rice is still slightly warm. Warm rice absorbs the flavorful dressing more readily.
I used water to cook the wild rice, but you can use low-sodium chicken or vegetable broth. Cook until tender but not mushy. The grains should have some resistance when you chew them, with no crunchy or chalky center.
Cover and refrigerate leftovers for up to 3 days. Bring the salad to room temperature before serving.
