This creamy labneh dip is topped with warm cherry tomatoes, green and Kalamata olives, za’atar, and garlicky olive oil. It comes together in 10 minutes for an easy Mediterranean appetizer.
Whip the labneh. In a mixing bowl, combine the labneh and lemon zest. Season with a generous pinch of kosher salt. Whisk gently, slowly drizzling in about 1 tablespoon of extra virgin olive oil as you whisk, until creamy and fluffy. Set aside or refrigerate for later.
Flavor the olive oil. In a small skillet, warm 1/4 cup extra virgin olive oil over medium-low heat. Add the sliced garlic and thyme sprigs. Cook for about 1 minute, watching for the garlic to turn just golden. Remove and discard the garlic.
Cook the topping. Add the tomatoes to the skillet and increase the heat to medium. Cook until they soften and begin to burst. Season with the za’atar and crushed red pepper flakes. Add the olives and cook for 30 seconds, or until warmed through.
Assemble the dip. Spread the whipped labneh in the bottom of a serving bowl. Spoon the warm olive oil, tomatoes, and olives over the top. Finish with fresh parsley and more thyme, if you like.
Serve. Serve immediately with pita chips or your favorite crackers.

For the best texture: Start with homemade labneh. Good-quality store-bought labneh will also work.
Labneh substitute: You can substitute a very thick whole-milk Greek yogurt, but the finished dip will have a softer consistency.
Storage: This dip is best enjoyed immediately after adding the warm topping. Refrigerate leftovers in an airtight container for up to 3 days.
