This 10-minute, no-cook antipasto salad combines crisp greens, Italian cured meats, creamy cheese, olives, and tangy marinated vegetables. Toss with Dijon vinaigrette just before serving for an easy, crowd-pleasing appetizer.
Mix. In a large serving bowl or platter, combine the romaine and/or spring greens, tomatoes, olives, giardiniera, artichoke hearts, pepperoncini, provolone, mozzarella, salami, and mini pepperoni. Cover and refrigerate until you are ready to serve, up to 1 day.
Dress and serve. Just before serving, pour about 1/4 cup of the vinaigrette over the salad and toss. Taste and add more vinaigrette if needed, then serve immediately.

Notes
For a composed salad: Spread the lettuce on a serving platter and arrange the remaining ingredients in groups on top, similar to a Niçoise salad. Drizzle with the vinaigrette and serve without tossing.
To make ahead: Assemble and refrigerate the undressed salad for up to 1 day. Store the vinaigrette separately for up to 1 week and add it just before serving.
