Creamy potato soup was one of my favorite childhood meals. I still start craving my mom’s recipe as soon as the weather cools and a piping-hot bowl of soup sounds like just the thing.
This healthy potato soup is my Mediterranean twist on that familiar comfort food. Rather than relying on heavy cream, bacon, and cheese, I use yellow potatoes, a generous mix of vegetables, and a splash of milk. Cumin, paprika, and turmeric add earthy warmth and give the soup its beautiful golden color.
Everything comes together in one pot in 50 minutes. Once the potatoes are very tender, blend the soup until smooth and creamy. Serve it as a cozy vegetarian dinner with bread or salad, or offer smaller bowls as a starter.

Potato soup can mean many different things. Some versions are loaded with heavy cream, butter, bacon, and cheese. This healthy potato soup takes a lighter, vegetable-forward approach without sacrificing its comforting texture.
- No heavy cream: Milk adds richness without making the soup overly heavy.
- Plenty of vegetables: Onion, carrot, celery, garlic, and potatoes form the base.

- Milk: Full-fat milk gives the soup its richest texture, but other percentages will also work. For a vegan version, use unsweetened, unflavored plant-based milk.

How to Make Healthy Potato Soup
This healthy potato soup is made entirely in one pot. Sautéing the vegetables and spices in olive oil builds the flavor base, while simmering the potatoes until very tender gives the blended soup its creamy body.
- Sauté the vegetables. Heat 2 tablespoons extra virgin olive oil in a large soup pot over medium-high heat. Add the onion, carrot, celery, garlic, and potatoes. Season with kosher salt, black pepper, cumin, paprika, and turmeric. Cook, tossing occasionally, for 5 to 7 minutes, until the vegetables have softened slightly.
- Add the broth and simmer. Pour in 4 cups vegetable broth and bring the soup to a boil. After about 5 minutes, reduce the heat to medium or medium-low. Partially cover the pot and simmer for 20 to 30 minutes, until the potatoes are cooked through and very tender.
- Add the milk. Remove the pot from the heat and stir in 1 cup milk or unsweetened, unflavored plant-based milk. Taste and adjust the seasoning.
- Blend until creamy. Carefully blend the soup with an immersion blender until smooth. Alternatively, transfer the soup to a countertop blender one-third at a time and blend until creamy.
- Garnish and serve. Ladle the potato soup into bowls. Finish with fresh parsley, chopped green onions, and a drizzle of extra virgin olive oil.
Tips for Creamy Potato Soup
- Cut the potatoes evenly. Aim for ½-inch cubes so they cook at approximately the same rate. Larger pieces may need more time to become tender enough for blending.
- Let the potatoes become very tender. A fork should slide easily through the center. Properly softened potatoes give the soup its smooth, creamy body.
- Adjust the texture to your taste. Blend the soup completely for a silky consistency. For more texture, leave it unblended or blend only part of the soup.
- Work in batches with a countertop blender. If you do not have an immersion blender, carefully blend the soup one-third at a time.
- Season after adding the milk. Once the milk is stirred in, taste the finished soup and add more salt or pepper if needed.

What to Serve with Potato Soup
I like to finish each bowl with a drizzle of good olive oil, fresh parsley, and chopped green onions. For more texture, add crispy roasted chickpeas or a little Parmesan cheese.
This creamy soup is filling enough to serve as a vegetarian main course. Pair it with rosemary focaccia with roasted garlic for dipping and a crisp lemon Parmesan lettuce salad to brighten the meal.
For a cozy cold-weather dinner, serve the soup with shaved Brussels sprouts salad with apples and arugula. You can also offer smaller bowls as a starter before easy turmeric chicken.

Am making it tonight and wondering, I have only Idaho potatoes. Any reason those won’t work? Also have surfeit of cans of coconut milk. I’m assuming that’s not a good idea with this soup. Has anyone tried?
Hello! Idaho potatoes will work here, we just tend to prefer yellow gold potatoes because of their soft texture and a rich, buttery flavor. I can’t really help you regarding the coconut milk, as that’s not something we’ve tried with this recipe. Hopefully someone else will be able to chime in :).

Loved the golden color & the warm spices. I had some fresh lamb bone broth on hand, so I used it. Topped the soup off with some chili olive oil & a dollop of creme fraiche, along with the green onion & parsley. We had air fried asparagus on the side. It was a feast! Delicious soup, not bland. I followed recipe but used red potatoes. I was lazy and did not use blender. Instead I removed about 1/3 of soup and mashed it with a potato masher to thicken it.
Making for two friends recovering from surgery. Can this be frozen. Want to make enough for my family as well.

How can this be Vegan if you are using chicken broth and milk? I get one can substitute but why mention these ingredients at all when it’s supposed to be a Vegan recipe? Just confuses the issue for those of us trying to find a truly vegan recipe without having to do all the substitutions!

I would normally make this wonderful soup exactly as written, but I had A LOT of leftover mashed potatoes in my refrigerator, and I decided to try using them in this soup. I simply prepared the other veggies as written in the recipe and stirred the potatoes into the blended soup. Absolutely delicious!!! Usually I make those excellent potato pancakes on this site with my leftovers, but I had a yen for soup. Glad I tried this. Thanks for all the delicious recipes.
