White bean shakshuka garnished with dill and parsley in a skillet with 2 pieces of pita bread. Next to this are small bowls of dill and parsley, a cup of olive oil, and more pieces of pita bread.

Shakshuka

“We have this probably twice a month. It’s easy, fast, inexpensive to make, and a nice change of pace from meat. It’s so comforting; we love putting the pan right on the table and digging in with pita bread. It’s great for two people because you can put as many eggs as you want in and save the rest of the sauce for breakfast the next morning.” — Kristina Larsen, The Mediterranean Dish Social Media Manager

Sautéed shrimp with 2 juiced lemon halves on a platter. Next to this is a stack of 2 plates.

Sautéed Shrimp with Garlic and Lemon

” I consider this my back-pocket recipe when I need to put something together for dinner right NOW. Shrimp cook in just minutes, picking up flavor from sizzling garlic, olive oil, and a generous squeeze of lemon for a dish that’s bright and savory. Add a fast pasta like my Lemon Pasta, or Sun Dried Tomato Pasta, and you’re done!” — Suzy Karadsheh, The Mediterranean Dish Founder

Blue pot with Stracciatella Soup and freshly grated Parmesan cheese on the side.

Stracciatella Soup

This time of the year, I especially crave Stracciatella Soup. It’s protein-rich, creamy without being heavy, oh-so-warming, and takes only 15 minutes. This is the soup I make the second I start to feel run down. It’s an instant sniffles curative!” – Sara May, professional chef and recipe developer

baked cod recipe in skillet with a side of Greek salad

Lemon and Garlic Baked Cod

“Baked cod is one of the most cooked recipes on the site and for good reason! Mild, flaky seared-then-baked cod cooks quickly with a garlic and lemon sauce and fresh parsley. Finishing it in the oven results in juicy fish with a light but savory flavor. It’s a healthy and protein-rich dinner that pairs well with a refreshing Greek salad.” — Suzy Karadsheh, The Mediterranean Dish Founder

Turkish Red Lentil Soup (Kırmızı Mercimek Çorbası)

“While most legumes need time to soften, red lentils cook down quickly into a naturally velvety soup in just over 30 minutes. With carrots and onions as a sweet-savory base, a potato for creaminess, and tomato paste and warm spices adding lots of flavor, the resulting soup is hearty in a hurry. Add the Turkish white bean salad piyaz for a fast feast!” — Suzy Karadsheh, The Mediterranean Dish Founder

Garlic Parmesan White Beans

“I just made this for the first time on Monday and love it! This recipe comes together in literally 15 minutes with just a few ingredients, yet it’s so warm and filling, it feels like a proper meal.” — Gaby Dawson, Ecommerce Manager. Just add some crusty bread.

salmon with spicy harissa-lime sauce

Lime-Harissa Spicy Salmon

“I often make this Lime Harissa Spicy Salmon when I’m in a hurry to get dinner on the table. I buy a wild salmon share every year from an Alaskan fisherman, so I always have salmon fillets on hand in my chest freezer. I love the combination of spicy harissa and lime with the richness of salmon. Usually, I’ll serve this with boiled or roasted potatoes and a simple green salad.” — Abigail Chipley, professional recipe developer.

Shrimp Pesto Pasta

“It’s quick, easy, I usually have most of the ingredients already, and every single person in my family loves it. Zero leftovers.” — Kate Kardel, Executive Assistant and busy mom to three girls.

Mediterranean Chicken with Tomatoes and Olives

“I believe olives belong on almost everything, and quick cooking chicken recipes are part of the weekly rotation in my house. I love this recipe because it’s fast, the chicken breasts cook quickly, and the layers of flavor keep everyone asking for seconds. My children and my husband are athletes, so making something filling and quick is a weeknight requirement!” — Summer Miller, Senior Executive Editor
