Quick Mediterranean Diet Recipes for Busy Weeknights

Let’s be honest: no one wants to spend a weeknight hunting down twenty different spices! Even if you do love to cook! If you’re looking for big Mediterranean flavors without the long grocery list, you’re in the right place!

I’ve gathered my favorite Mediterranean Diet dinner recipes designed for real life! Each recipe uses 10 ingredients or fewer (not counting the basics like salt, pepper, and water), making them easy to prep without skimping on flavor. From simple mains to effortless one-pan meals, these recipes are proof that healthy cooking can be the easiest part of your day.

If you have a little extra time, pair any of these mains with a vegetable, side dish or salad. If you’ve ever thought healthy cooking had to be complicated, these simplified recipes prove otherwise!

Tarragon Chicken with Dijon Pan Sauce

A restaurant-worthy dish with only 8 ingredients. Chicken breasts cook in a silky Dijon pan sauce perfumed with fresh tarragon, creating a rich, savory main that pairs beautifully with a simple steamed vegetable. Still have tarragon to use up? Make a green salad with tarragon dressing.

Fennel Soup

Fennel’s natural sweetness stars in this silky, pureed soup. Adding golden potato makes it creamy, but the recipe contains no cream! It’s a lovely, light dinner, especially with bread or crispy Sesame Breadsticks. Serve it with an easy salad like Lemon Parmesan Lettuce Salad or lemony Greek Maroulosalata.

Mediterranean-Style Baked White Fish

Good seafood doesn’t need much to shine. Tender fish bakes blanketed in what is essentially a Mediterranean take on salsa with oregano, garlic, olives, red onion, and cherry tomatoes, creating a light and satisfying dinner. A one-pan wonder, this one is perfect with brown rice

Lemon Rosemary Chicken

An unfussy Mediterranean main, chicken breasts roast with garlic, onion, fresh rosemary, and lemon until they’re juicy and deeply flavorful. Assemble, bake, and it’s done! Add crispy smashed potatoes and either a radicchio salad or a traditional Greek salad.

Pomegranate Molasses Glazed Salmon

Pomegranate molasses creates a glossy sweet-and-savory glaze that caramelizes on salmon fillets as they cook, while a bed of baby spinach softens into a super-easy side.

Canned cannellini beans are a shortcut to this fast and easy salad with tomatoes, red onion, lemon, and herbs. Enjoy it on its own or serve it as a side for kofta for the classic Turkish pairing called kofte piyaz. Boost the protein by adding tuna or chicken.

Earthy and savory, this cozy soup recipe proves you don’t need a lot of ingredients to make a rich, complex soup. Mushrooms bring natural umami, olive oil adds richness, and the result is a bowl that feels hearty enough to stand on its own.

Harissa Honey Chicken

Harissa brings heat, honey adds sweetness, and together they create a sticky, deep red glaze that clings to baked (or grilled!) chicken thighs. A cooling, creamy cucumber salad is the perfect accompaniment.

If you’ve never considered beans a main dish, this staff favorite will change your mind. Simmered with garlic, sweet cherry tomatoes and Parmesan, the beans turn out creamy and rich. It’s an easy plant-based dinner that we keep on rotation. Pair it with crusty bread to soak up all the flavors.

Sheet Pan Chicken and Potatoes with Olives and Herbes de Provence

Herbes de Provence and green olives transform a basic sheet pan dinner of chicken and potatoes into a Provencal dream. Add some bagged salad mix or, If you’re aiming to impress, an elegant Endive Salad with Apples, Walnuts, and Dates.
