This easy, flavor-packed za'atar garlic salmon recipe has been in the queue since the beginning of summer. And I'm so excited to finally share it with you!

Because we try to faithfully follow the Mediterranean diet, I've been looking for new, easy ways to prepare fish. This garlic salmon recipe is one of those that came together on a whim of experimentation, and I'm so glad it did. It's become another quick go-to sheet pan dinner, for which I will not apologize.

There is no big technique behind this delicious garlic salmon. I mean, it's salmon, tossed on a baking sheet with a few veggies, right?! But it's the simple, decidedly Middle Eastern twist that took salmon to a whole new level for me...

What to serve with Za'atar Garlic Salmon

To save time and energy, I like to toss in some vegetables to roast with the salmon. This time, baby potatoes, tomatoes and broccoli florets. But if you're looking to add more, try: 3-ingredient Mediterranean salad; Lebanese rice; and perhaps a dip like roasted red pepper hummus, or Baba Ganoush!

Za'atar Garlic Salmon Recipe

Check out this easy, flavor-packed za'atar garlic salmon!  It is a MUST-try!


  • 12 baby potatoes (about 12 oz), scrubbed
  • 2 cups grape tomatoes (about 10 oz), halved if you like
  • 6 oz broccoli florets
  • 3 tbsp fresh minced garlic (about 5 to 6 cloves)
  • Quality Extra Virgin Olive Oil
  • Salt and pepper
  • 2 tsp Za'atar spice, divided, plus more for later
  • 1 tsp coriander, divided
  • 1 lb salmon fillet, no skin
  • 1 lemon, juice of


  1. Preheat oven to 400 degrees F.
  2. In a large bowl, add the potatoes, grape tomatoes, and broccoli. Pour 2 tablespoon extra virgin olive oil and toss. Then, add a little salt and pepper, 1 tablespoon minced garlic, 1 teaspoon za'atar spice, ½ teaspoon coriander. Toss again so that the spices are distributed to coat the vegetables. Transfer the vegetables to a large baking sheet with a rim.
  3. Pat salmon dry. Season with salt and pepper. Drizzle just a little extra virgin olive oil. Spread the remaining garlic evenly on top. Sprinkle the remaining za'atar and coriander.
  4. Cut seasoned salmon into 4 equal pieces, and place on the prepared baking sheet with the vegetables. Add another generous drizzle of extra virgin olive oil over the salmon and veggies, if needed.
  5. Bake in heated oven for 15-16 minutes. Remove from heat and squeeze lemon juice on salmon. Sprinkle more za'atar all over. Enjoy with Lebanese rice and a side of your favorite salad. (See suggestions for more sides in the post above under "what to serve with za'atar garlic salmon).

    Flavor is fantastic! One star off because I used baby gold potatoes and they did not cook in the time allotted. In fact they were barely fork tender. Should the potatoes be halved possibly to speed up cooking time?

    Flavors were awesome! But I have a few tweaks.

    Unless your baby potatoes are really tiny, halve or quarter them, or roast longer than 15 minutes. (The broccoli can tolerate a few minutes more.)

    Unless you have really thick salmon, I’d add it about half way through the cooking time, as well as the tomatoes. (15 minutes for the average supermarket cut of salmon is too long.) The potatoes and broccoli can tolerate a bit more time if the salmon needs it.

    So delicious!!!!!!! My baby potatoes were not done in time so I put them back in the oven for another 10 minutes or so. Next time I will cut them in half. Super easy and the flavors were incredible together.

    This was such a fresh, delicious and easy meal to make -- all on a single sheet. Woohoo! I cut a lemon in half, turned it upside down and roasted that too, because why not. Squeezed very easily. Served with garlic couscous and fresh parsley. My teens had artisan bread and olive oil with theirs.

    Made this for myself tonight using is spring, after all...and, oh my, what a delicious and easy meal. BTW, I used TMD Za'atar and don't skimp on the contents. A Shaker top was useless on the coriander because the jar was soooo full. Wish I could upload a photo. What a lovely dish.

    Regarding the Za'atar Garlic Salmon--I saw a video of prepping it on Instagram, but it is different than the one on the website. It precooked the veggies before adding the salmon. I now can't locate that Instagram video. How do I find it and will you update your website with the new instructions?

    I just added this recipe to "my favorite recipes" list. Made it last night. Loved everything about it. I knew my little potatoes wouldn't cook in 15 minutes though so cooked the veggies for 35 minutes then added the salmon. Came out perfect!

    I made this and both my 19 year old and 9 year old enjoyed it. Very good and I will make it again. I am down over 50 lbs in 2023 so my Mediterranean way of cooking and eating will continue throughout 2024 and beyond.
