We have arrived to the end of May, the time of the year when the earth finally starts to give way to an abundance of my favorite fruits and vegetables. This is when most of us abandon the oven in favor of its sexier cousin, the outdoor grill, right?
I think the grill is an especially good tool for cooking vegetables, so I’m kicking off things with this easy grilled zucchini.
I don’t typically give too much thought to grilling my vegetables, particularly zucchini. Most days, all it takes is a pinch of salt and a drizzle of good extra virgin olive oil. The grill does all the hard work, giving me softer; sweet; and nicely charred zucchini.
But this time around, I thought I would give my grilled zucchini a bit of a Mediterranean makeover. A little lemon juice and lemon zest to intensify the flavor, and three toppings to load on top: tomatoes, feta and chopped green onions. And the humble grilled zucchini turned into a perfectly satisfying appetizer or side dish.

Step-by-step tutorial for this grilled zucchini
Lightly oil the grate of an outdoor gas grill. Preheat the grill to medium-low.
Season the zucchini with salt, freshly ground pepper and garlic powder. Drizzle generously with extra virgin olive oil. Work the zucchini in the olive oil so that all slices are well coated on both sides.
Cook on the preheated grill until softened and nicely charred, about 3 to 4 minutes on each side.
Remove the zucchini from the grill. Add a little more extra virgin olive oil, the lemon juice and lemon zest. Top with the feta, tomatoes and onions. Enjoy warm or at room temperature.
