Give yourself 1 hour and 20 minutes from start to finish, including the cooking and cooling time. Most of that time is hands-off, and you can prepare the remaining ingredients while the rice cooks.

- Prepare the remaining ingredients: While the rice cooks, chop 2 apples and 2 shallots. Remove the seeds from 1 small pomegranate to yield about 1 cup. Roughly chop 1 cup walnuts, 1/2 cup parsley leaves, and 1/2 cup mint leaves.
- Mix the salad: Let the rice cool slightly, but not completely. Add 2 cups baby spinach, the apples, shallots, pomegranate seeds, walnuts, 3/4 cup dried cranberries, parsley, and mint.

OMG please make a video of this going into the holiday season as it is so flavorful and festive looking too! I finally made it and it’s even better the next day. The apples didn’t get brown, the greens hold up fine. I cooked wild rice, and separately, 1/4 cup of farro, and I kind of liked having two different whole grains in there. I added a few chopped pitted dates into the mix, and added more lemon juice to compensate for the sweet punch. I will be eating this all week and loving it!
