The Yogurt Marinade I Use for Juicy Chicken
The key to succulent, extra tender, flavor-packed chicken is in the marinade! And as far as good chicken marinades go, one secret ingredient makes a big difference: creamy whole milk yogurt.
Its gentle acidity helps tenderize the chicken, while its creamy texture carries the bold Mediterranean flavors I love into every bite. My chicken marinade recipe works with any cut, but you notice the biggest difference in lean cuts like chicken breasts, which are notorious for drying out.
As a daughter of the Mediterranean, I reach for the same reliable flavor-makers again and again: good olive oil, citrus, plenty of garlic, fresh herbs, and warm spices. They can turn a budget-friendly package of chicken breasts into something you actually look forward to eating.
For quick weeknight dinners, I usually pan-sear the marinated chicken, just as I do in the video. But this recipe is very flexible: Take it to the grill when the weather is right, or bake it in the oven. Give the chicken a couple of hours in the fridge, if you can, but even 30 minutes will make a difference.

Chicken Marinade Ingredients
This chicken marinade starts with a creamy yogurt base, followed by the usual Mediterranean flavor-makers: citrus, good olive oil, plenty of garlic, herbs, and warm spices. Here is what you’ll need:
- Plain whole-milk yogurt: Use 1 1/2 cups as the creamy base. It coats the chicken well, carries the seasonings, and gently tenderizes the meat.
- Lemons: You’ll need the juice of 2 lemons and the zest of 1. Zest one lemon before squeezing it—a bald lemon is much easier to juice than a juiced lemon is to zest!
- Extra virgin olive oil: A 1/4 cup adds richness and helps the marinade coat the chicken evenly. I use Private Reserve Greek extra virgin olive oil for its fruity flavor.
- Garlic: Yes, 10 to 12 cloves! Garlic is the start of every good thing, in my opinion. Mince it finely so it spreads throughout the marinade.
- Dried Herbs: Greek oregano brings its familiar earthy, lemony aroma, while dried mint adds freshness.
- Spices: This foursome gives the marinade its warm Mediterranean character. Cumin adds earthiness, coriander is subtly citrusy, paprika brings color and mild sweetness, and just a little nutmeg rounds everything out.
- Fresh parsley: Add a generous handful, finely chopped. The finer you chop the parsley, the more evenly its fresh flavor will spread through the marinade.
- Kosher salt and black pepper: Season the marinade generously to bring all the flavors forward.
- Chicken breast cutlets: The tested recipe uses 1 1/2 pounds of boneless chicken breast cutlets. Their even thickness helps them cook quickly, whether you use the stovetop, grill, or oven.

How to Make the Best Chicken Marinade
This chicken marinade is as easy as mixing, marinating, and cooking. The yogurt does most of the work. You just need to give it a little time.
- Make the marinade. In a large mixing bowl, whisk together 1 1/2 cups whole-milk yogurt, the juice of 2 lemons, the zest of 1 lemon, and 1/4 cup extra virgin olive oil. Add 10 to 12 minced garlic cloves, 2 teaspoons each dried oregano and mint, 1 teaspoon each cumin, coriander, and paprika, and 1/2 teaspoon nutmeg. Season generously with salt and pepper, then stir in a large handful of finely chopped parsley.
- Marinate the chicken. Place 1 1/2 pounds chicken breast cutlets into the bowl with the marinade; mix well, or add to a gallon-size zip-top bag and pour in the marinade. Seal the bag and massage it gently so every piece is well coated. Refrigerate for 2 hours or overnight. If you are short on time, even 30 minutes will make a difference.
- Remove the excess marinade. When you are ready to cook, remove the chicken from the bag and gently shake off the excess marinade. This helps the chicken brown more evenly.
Three Ways to Cook the Chicken
- Pan-sear: Heat 2 to 3 tablespoons extra virgin olive oil in a nonstick skillet over medium-high heat until shimmering but not smoking. Add the chicken cutlets in a single layer and cook undisturbed for 5 minutes. Turn and cook for another 5 minutes, or until the chicken reaches an internal temperature of 165°F.
- Grill: Heat an outdoor grill to medium-high and oil the grates well. Grill the chicken for 5 minutes on the first side, then turn and cook for another 3 to 5 minutes, or until it reaches 165°F.
- Bake: Heat your oven to 400°F and brush a baking dish generously with extra virgin olive oil. Arrange the chicken in one layer without crowding, cover tightly with foil, and bake for 10 minutes. Uncover and continue baking for another 8 to 10 minutes, or until the chicken reaches an internal temperature of 165°F. The exact timing will depend on the thickness of your cutlets.
- Let the chicken rest. Remove the chicken from the heat, cover loosely with foil, and let it rest for about 5 minutes before serving.

Why Yogurt Makes a Good Chicken Marinade
Plain whole-milk yogurt is especially useful for lean chicken breasts. Its mild acidity gently tenderizes the meat, while its creamy texture helps the garlic, herbs, and spices cling to every piece.
Unlike a sharper vinegar-based marinade, yogurt works more gradually. That gives the chicken time to take on flavor without overwhelming its texture. It also brings a subtle tang that balances the richness of the olive oil and the warmth of the spices.
And yogurt is no one-trick situation in my kitchen. I use it in marinades, sauces, and even to make creamy homemade labneh. Here, it creates the perfect base for lemon, plenty of garlic, oregano, mint, cumin, coriander, paprika, nutmeg, and fresh parsley.
Chicken Marinade Variations
Once you have the yogurt, citrus, and olive oil base, you can take the flavor in a few different directions. Your spice drawer can do a lot of the work here!
- Change the fresh herbs: Use fresh basil or mint instead of parsley. Whatever you choose, chop the herbs finely so their flavor spreads throughout the marinade.
- Give it an Italian twist: Add fresh thyme and a little rosemary for a more Italian-inspired flavor.
- Take it toward North Africa: Add harissa for some smoky heat or ras el hanout for an aromatic Moroccan twist.
- Add more heat: A pinch of cayenne or your favorite Cajun spice will do the trick. A lot of my Southern friends would tell you not to be shy here!
- Try lime: Lemon is my first choice and what I use in the tested recipe, but lime will also work when you want to change things up.
Don’t fall into a chicken-dinner rut. Keep the creamy base, then jazz it up with the herbs and spices you have on hand.
How Long Should You Marinate Chicken?
For the best balance of tenderness and bold flavor, refrigerate the chicken in the yogurt marinade for at least 2 hours. If you can plan ahead, I highly recommend letting it marinate overnight.
Short on time? Thirty minutes in the refrigerator will still make a noticeable difference. The chicken may not take on quite as much flavor, but the creamy yogurt marinade will have time to coat every piece.
Keep the chicken refrigerated the entire time it marinates. When you are ready to cook, shake off the excess marinade and discard anything that has come into contact with the raw chicken.
Make It a Meal?
This boldly seasoned chicken works with almost any Mediterranean side. For a simple weeknight situation, add one fresh thing, one starchy thing, and perhaps a sauce for drizzling. Dinner is handled!
- Keep it simple: Spoon the chicken over fluffy Greek lemon rice and add a crisp Mediterranean cucumber and tomato salad.
- Make it a grill-night spread: Set out warm homemade pita bread and creamy tzatziki sauce. Yes, that is more yogurt, and I am not at all mad about it!
- Add some vegetables: Serve the chicken with colorful Italian roasted vegetables or crispy baked zucchini.
For a bigger feast, add hummus, olives, and any other mezze you love, then let everyone build their own plate.
Make Ahead and Storage
- Make Ahead Chicken Marinade: This is a good recipe to get a head start on. Mix the yogurt marinade up to 2 nights in advance and refrigerate it in a tightly sealed glass container. Add the raw chicken when you are ready to begin the 2-hour or overnight marinating time.
- To Store: Store cooked chicken in an airtight container in the refrigerator for 3 to 4 days. Reheat leftovers to 165°F, or enjoy the chicken cold over a salad or tucked into warm pita.
- To Freeze: I don’t recommend freezing the raw chicken in this yogurt marinade. Dairy-based marinades can change texture after freezing and thawing.

- Get ready to cook. Remove the chicken from the bag or bowl and gently shake off the excess marinade. Discard the used marinade. Choose one of the following cooking methods.

Your best bet to test for doneness is to use a meat thermometer. Chicken is fully cooked when it reaches and internal temp of 165 degrees F.
