As a child, I didn’t appreciate Mom’s homemade vegetable soup. Now, I am all about a hearty bowl—and the bigger the bowl, the better!

This version is an amped-up take on hers, filled with zucchini, mushrooms, carrots, potatoes, tomatoes, and chickpeas. Unlike Italian minestrone, there is no pasta. The chickpeas and chunky vegetables make it satisfying on their own.

The real flavor-makers are coriander, turmeric, sweet paprika, fresh parsley, and lime. I finely chop the parsley stems and add them early, when they have time to flavor the broth. The tender leaves, lime zest, and lime juice go in at the end to keep everything tasting fresh and bright.

Sautéing the mushrooms separately is another small step that makes a difference. It concentrates their flavor and keeps them from overcooking while the remaining vegetables simmer. The result is a cozy, colorful soup with layers of savory, earthy, and citrusy flavor.

  • Broth: Use low-sodium vegetable or chicken broth. Choose vegetable broth if you want to keep the soup vegan.

How to Make Homemade Vegetable Soup

  • Sauté the mushrooms. Heat 1 tablespoon extra virgin olive oil in a large pot over medium-high heat until shimmering. Add the mushrooms and cook for 3 to 5 minutes, stirring regularly. Transfer them to a plate and set aside.
  • Soften the vegetables. Add more olive oil to the pot if needed. Add the chopped parsley stems, onion, garlic, celery, carrots, zucchini, and potatoes. Stir in the coriander, turmeric, and sweet paprika, then season with salt and pepper. Cook for about 7 minutes, stirring regularly, until the vegetables have softened slightly.
  • Add the chickpeas, tomatoes, and broth. Add the chickpeas, whole peeled tomatoes, bay leaves, thyme, and broth. Bring the soup to a boil and let it boil for 5 minutes. Reduce the heat to medium-low, partially cover the pot, and simmer for 15 minutes.
  • Return the mushrooms to the pot. Uncover the soup and stir in the sautéed mushrooms. Cook for a few more minutes, just until they are warmed through. The potatoes and carrots should be tender.
  • Finish with fresh herbs and lime. Stir in the parsley leaves, lime zest, and lime juice. Remove the pot from the heat and discard the bay leaves.
  • Serve. Ladle the soup into bowls. Finish with toasted pine nuts, crushed red pepper, or an extra squeeze of lime, if you like.

Ways to Make This Vegetable Soup Recipe Your Own 

Homemade vegetable soup is a great way to use what you have. Just keep in mind that different vegetables may cook at different rates. Here are a few easy ways to make it your own:

  • Use a different bean: Replace the chickpeas with cannellini, navy, or kidney beans. If you regularly cook chickpeas from dried and have some ready, you can use those as well.
  • Change the vegetables: Sweet potato, squash, cabbage, cauliflower, broccoli, frozen peas, corn, and green beans can all work in a vegetable soup.
  • Leave out the potatoes: You can omit the potatoes for a lower-carb variation.
  • Make it spicy: Add crushed red pepper flakes to your bowl for a little heat.
  • Use lemon: If you do not have a lime, finish the soup with lemon zest and juice instead.

  • 1/2 teaspoon sweet paprika
  • Salt
  • Black pepper
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 (32-ounce) can whole peeled tomatoes
  • 2 bay leaves
  • 1/2 teaspoon dried thyme
  • 6 cups low-sodium vegetable or chicken broth
  • Zest of 1 lime
  • Juice of 1 lime
  • 1/3 cup toasted pine nuts, optional

Instructions
 

  • Sauté Mushrooms: In a large pot, heat 1 tablespoon olive oil over medium-high heat until shimmering but not smoking. Add the mushrooms and cook for 3 to 5 minutes, stirring regularly. Transfer the mushrooms to a plate and set aside.
  • Soften the vegetables: Add more olive oil to the pot if needed. Add the chopped parsley stems, reserving the leaves for later. Add the onion, garlic, celery, carrots, zucchini, and potatoes. Stir in the coriander, turmeric, and sweet paprika, then season with salt and pepper. Cook for about 7 minutes, stirring regularly, until the vegetables have softened slightly.
  • Add the chickpeas, tomatoes, and broth: Add the chickpeas, tomatoes, bay leaves, thyme, and broth. Bring to a boil and cook for 5 minutes. Reduce the heat to medium-low, partially cover, and simmer for 15 minutes.
