- Zest of 1 lime
- Juice of 1 lime
- 1/3 cup toasted pine nuts, optional
Instructions
- Sauté Mushrooms: In a large pot, heat 1 tablespoon olive oil over medium-high heat until shimmering but not smoking. Add the mushrooms and cook for 3 to 5 minutes, stirring regularly. Transfer the mushrooms to a plate and set aside.

As I’ve posted before, this recipe is the bomb and so versatile. I sub out chicken for chickpeas (go figure, hub loves hummus—especially yours—but hates whole) and scratch the potatoes. I also add Sumac, from here, and a dash of fish sauce. When someone is sick, I make this and always get asked for the recipe link when I tell them, except for our neighborhood old Scrooge. I add in pumpkin for him and bring it for Halloween with the promise he doesn’t yell at the kids, who he hates.
After multiple times making, I like it with lemon more. But that may be because I don’t get the juicy limes in TX I used to get it FL. It’s a spectacular soup recipe as is and again, so versatile.

Why do so many recipes have to contain So. Much. Sodium! I’m going to leave out the salt in all of these recipes. Please offer different ways to season other than with salt for those of us on low sodium diets. Thanks!
This may be too late but the sodium may be overstated because there is no way to calculate rinsed chickpeas and she probably punched the brand of chickpeas she included and that can be alleviated by cooking from dry. Also most recipes use Kosher salt even if not stated, even cookbooks. 1 Tbsp of Kosher vs table salt is drastically different in sodium content.
Additionally homemade broth doesn’t have to be salted for preservation purposes. But everything I make from scratch, I always do a final adjustment of salt to taste. Remember if it comes in a box, can or any other container it will have more salt. I literally add Celtic sea salt to my water and lemon as I am now low sodium since I cook more after retiring!
I’d also look to finishing off with Maldon salt. It’s insanely good. I only use table salt for our Bug-a-Salt gun.
